Health Benefits

Ingredients

  • - 2 lbs premium beef chuck roast
  • - 3 large heirloom tomatoes, crushed
  • - 1/4 cup extra virgin olive oil
  • - 4 garlic cloves, minced
  • - 2 sprigs fresh rosemary
  • - 2 medium yellow onions, finely diced
  • - 1/3 cup dry red wine
  • - 2 tablespoons aged balsamic vinegar
  • - Sea salt and cracked black pepper
  • - Fresh basil leaves for garnish

Instructions

  1. 11. Generously season chuck roast with sea salt and cracked pepper. Allow meat to reach room temperature, about 30 minutes.
  2. 22. Sear roast in cast-iron skillet over high heat until deep golden brown crust forms, approximately 4-5 minutes per side.
  3. 33. Transfer roast to slow cooker. Deglaze skillet with red wine, scraping browned bits, and pour liquid over meat.
  4. 44. Add crushed tomatoes, minced garlic, diced onions, rosemary sprigs, and balsamic vinegar.
  5. 55. Cover and slow roast on low setting for 6-7 hours until meat becomes fork-tender and pulls apart effortlessly.
  6. 66. Remove rosemary sprigs. Shred meat using two forks.
  7. 77. Reduce remaining sauce until thickened, about 15 minutes.
