- 16 oz cream cheese, room temperature

- 6 oz fontina cheese, freshly shredded
•
- 10 oz frozen spinach, thawed and thoroughly drained
•
- 14 oz canned artichoke hearts, drained and finely chopped
•
- 3 cloves garlic, minced
•
- 1/4 cup white wine (dry)
•
- 1/3 cup heavy cream
•
- 2.5 oz parmesan cheese, freshly grated
•
- 1/2 tsp white pepper
•
- 1/4 tsp salt

2. Place cream cheese in top pot and melt slowly, stirring constantly

3. Once cream cheese is smooth, add white wine and heavy cream

4. Gradually add fontina cheese while stirring continuously

5. Add minced garlic, salt, and white pepper

6. Squeeze spinach thoroughly in cheesecloth to remove all moisture

7. Fold in spinach and chopped artichokes

8. Add parmesan cheese last, stirring until completely melted

9. Transfer to fondue pot and maintain at 120-130°F
