- 2.5 lbs chicken thighs, boneless and skinless

- 1 cup soy sauce
•
- 1/2 cup mirin
•
- 1/3 cup brown sugar
•
- 4 cloves garlic, minced
•
- 1 tablespoon fresh ginger, minced
•
- 1/4 cup sake
•
- 2 tablespoons cornstarch
•
- 1/4 cup water
•
- 2 tablespoons vegetable oil for cooking

1. Mix soy sauce, mirin, brown sugar, minced garlic, ginger, and sake in a bowl

2. Reserve 1 cup of marinade for sauce, combine remaining with chicken thighs

3. Marinate chicken 2-4 hours or overnight
