Ingredients

  • - 1 whole chicken (3-4 lbs), room temperature
  • - 2 medium lemons
  • - 4 sprigs fresh thyme
  • - 3 sprigs fresh rosemary
  • - 4 tablespoons unsalted butter, softened
  • - 6 garlic cloves, peeled
  • - 2 tablespoons olive oil
  • - 1½ tablespoons kosher salt
  • - 1½ teaspoons freshly ground black pepper
