Ingredients
•
- 2 lbs fresh cod or pollock fillets
•
- 2 cups all-purpose flour
•
- 1/2 cup cornstarch
•
- 2 tbsp baking powder
•
- 1 tbsp sea salt
•
- 1 tsp white pepper
•
- 1 cup cold club soda
•
- 2 large eggs
•
- Vegetable oil for deep frying
•
- Kosher salt for finishing
Instructions
1
1. Pat fish fillets completely dry with paper towels. Cut into 3-inch uniform pieces.
2
2. Prepare batter by whisking flour, cornstarch, baking powder, salt, and white pepper in a large mixing bowl.
3
3. Gradually add cold club soda and eggs, whisking until smooth and free of lumps. Batter should have consistency of thin pancake mix.
4
4. Heat vegetable oil in deep fryer or heavy-bottomed pot to 375°F. Use thermometer for precise temperature.
5
5. Dredge each fish piece thoroughly in batter, allowing excess to drip off. Carefully lower into hot oil.
6
6. Fry fish pieces in small batches, turning once, until golden brown and crispy, about 3-4 minutes per side.
7
7. Remove with spider strainer, drain on wire rack with paper towels underneath.
8
8. Sprinkle with kosher salt immediately after removing from oil.
