Ingredients

- 250g sweet potato glass noodles (dangmyeon)
•
- 100g fresh spinach
•
- 2 medium carrots, julienned
•
- 1 large yellow onion, thinly sliced
•
- 100g shiitake mushrooms, sliced
•
- 2 eggs, beaten and cooked into thin omelettes, julienned
•
- 3 cloves garlic, minced
•
- 2 stalks green onions/scallions, cut into 2-inch lengths
•
- 60ml soy sauce
•
- 2 tbsp sesame oil
•
- 1 tbsp brown sugar
•
- 2 tbsp vegetable oil
•
- Toasted sesame seeds for garnish
Instructions

1. Soak glass noodles in warm water for 20 minutes until pliable

2. Heat wok until smoking. Add spinach with pinch of salt, cook 30 seconds until wilted. Remove and squeeze dry

3. Boil noodles 5 minutes until clear and chewy. Drain, cut into shorter lengths with scissors

4. Toss noodles with 1 tbsp sesame oil while hot

5. Stir-fry carrots until crisp-tender, about 2 minutes. Remove

6. Cook onions until translucent, about 3 minutes. Remove

7. Sauté mushrooms until golden, about 4 minutes. Remove

8. Combine soy sauce, remaining sesame oil, brown sugar

9. Return all vegetables to wok with noodles

10. Pour sauce mixture, toss until well-combined and hot
