Ingredients

  • Beef (brisket or shank)
  • soy sauce
  • water
  • sugar
  • garlic
  • jalapeño or shishito peppers
  • hard-boiled quail eggs (optional)
  • sesame seeds

Instructions

  1. 1Cut beef into 2-3 inch chunks.
  2. 2Boil in water for 5 minutes to remove impurities, then drain.
  3. 3In a pot, combine the beef, soy sauce, water, sugar, and whole garlic cloves.
  4. 4Bring to a boil, then reduce heat and simmer for 1-2 hours until the beef is very tender.
  5. 5Add whole peppers in the last 30 minutes of cooking.
  6. 6If using quail eggs, add them in the last 20 minutes.
  7. 7The sauce should reduce significantly.
  8. 8Shred the beef into thin strips.
  9. 9Serve with the garlic, peppers, eggs, and remaining sauce.
