- 2 blocks (14 oz each) extra-firm tofu

- 3 tablespoons soy sauce

- 2 tablespoons mirin
•
- 1 tablespoon sesame oil

- 2 cloves garlic, minced
•
- 1 inch ginger, finely grated

- 2 green onions/scallions, bias-cut
•
- 1 red chile pepper, thinly sliced
•
- 2 tablespoons vegetable oil
•
- 1 tablespoon roasted sesame seeds
•
- 1 cup dashi stock (or water)

1. Press tofu blocks between paper towels for 30 minutes to remove excess moisture

3. Heat vegetable oil in a large skillet over medium-high heat until shimmering
