  • - 2 tbsp kosher salt
  • - 1 tbsp freshly ground black pepper
  • - 4 tbsp extra-virgin olive oil
  • - 1/2 cup unsalted butter
  • - 4 oz goat cheese, softened
  • - 1/4 cup fresh basil leaves, chiffonade
  • - 2 cups sun-dried tomato sauce
  • - 2 tbsp minced garlic
  • - 1/4 cup white wine
  • - 2 tbsp fresh lemon juice

Instructions

  1. 11. Butterfly chicken breasts to even thickness, about 1/2 inch thick.
  2. 22. Combine flour, 1 tbsp salt, and 1/2 tbsp pepper in shallow dish. Dredge chicken breasts, shaking off excess.
  3. 33. Heat olive oil in large cast-iron skillet over medium-high heat until shimmering. Sear chicken 4-5 minutes per side until golden brown and internal temperature reaches 165°F.
