  • - 2 (10 oz) cans red enchilada sauce
  • - 8 large corn tortillas
  • - 2 cups sharp cheddar cheese, freshly grated
  • - 1 cup Monterey Jack cheese
  • - 1 medium white onion, finely diced
  • - 2 jalapeños, seeded and minced
  • - 1/4 cup fresh cilantro, chopped
  • - 1 (4 oz) can diced green chiles
  • - 2 tablespoons olive oil
  • - Salt and black pepper to taste
  • - Garnish: sour cream, sliced green onions

Instructions

  1. 11. Preheat oven to 375°F. Lightly grease a 9x13 inch baking dish.
  2. 22. Heat olive oil in large skillet. Sauté onions and jalapeños until softened, about 3-4 minutes.

  4. 44. Layer bottom of baking dish with 4 tortillas, slightly overlapping. Pour 1/2 cup enchilada sauce over tortillas.
