- 3 cups shredded rotisserie chicken

- 2 (10 oz) cans red enchilada sauce

- 8 large corn tortillas
•
- 2 cups sharp cheddar cheese, freshly grated

- 1 cup Monterey Jack cheese
•
- 1 medium white onion, finely diced
•
- 2 jalapeños, seeded and minced
•
- 1/4 cup fresh cilantro, chopped
•
- 1 (4 oz) can diced green chiles
•
- 2 tablespoons olive oil
•
- Salt and black pepper to taste
•
- Garnish: sour cream, sliced green onions

1. Preheat oven to 375°F. Lightly grease a 9x13 inch baking dish.

2. Heat olive oil in large skillet. Sauté onions and jalapeños until softened, about 3-4 minutes.

3. Add shredded chicken, half the green chiles, salt, and pepper. Stir to combine and warm through.

4. Layer bottom of baking dish with 4 tortillas, slightly overlapping. Pour 1/2 cup enchilada sauce over tortillas.

5. Spread chicken mixture evenly. Sprinkle 1 cup mixed cheeses over chicken.

6. Top with remaining tortillas. Pour remaining enchilada sauce completely covering tortillas.

7. Sprinkle remaining cheese, remaining green chiles on top.

8. Bake until cheese is golden and bubbling, about 25-30 minutes.
